Resolution Recap

One of my resolutions for 2010 was for my family to not eat out so much - so on Sunday I went through several of my favorite blogs and found some great recipes for the week. I have to let y'all know about two that we have had so far this week and they were both KEEPERS in the recipe box!!
**Disclaimer - I don't cook, I hunt the recipes and give them to my wonderful, amazing, awesome hubby who does 99% of the cooking in our house**

On Weds night we had this Shrimp and Rice casserole that I found on Kelly's Recipes.

Ingredients
  • 1 (8-ounce) package wild rice
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1/2 green bell pepper, seeded and chopped
  • 1/2 onion, chopped
  • 1 (10 3/4-ounce can) condensed cream of mushroom soup
  • 2 cups grated sharp Cheddar
  • Salt and pepper

Directions

Cook the rice according to package directions minus 1/4 cup water. Drain and cool.

Bring 2 cups water and 1/2 tablespoon salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.

Heat the butter in saucepan and saute the pepper and onion until soft, about 5 minutes.

Preheat oven to 325 degrees F.

In a large bowl, combine the rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper, to taste. Mix well. Spray a 9-inch square aluminum cake pan or an 11 by 7-inch glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 cup cheese. Bake for 30 minutes, until bubbly.


Tonight we had this chicken that I found on Caroline's Recipe Blog. This chicken was really, really, REALLY good! I had this with spinach and a small salad - VERY good!!

Ingredients:
1/2 cup butter (or margarine), melted
2 tsp Dijon mustard
1 tsp Worcestershire sauce
1 cup Italian bread crumbs
1/2 cup grated parmesan cheese
4-6 boneless, skinless chicken breast

Directions:
1. In a pie plate or shallow bowl combine butter, mustard, and Worcestershire.
2. In a plastic bag, combine crumbs and cheese.
3. Dip chicken in butter mixture, then shake in crumb mixture.
4. Place in 9x13 pan. bake at 350 for 4
